Stomach TroubleMuch of the tuna scrape responsible for the current outbreak of Salmonella has been recalled, but more cases were reported early this month, including the appearance of a strain of Salmonella not usually seen in the US.

Food poisoning symptoms can start within an hour after exposure, or up to two weeks. So although the tuna scrape products (mostly restaurant or grocery store made tuna and sashimi) have been recalled, it’s still possible a few people might be affected.

While people with weakened immune system are more susceptible to food poisoning symptoms, often becoming hospitalized (dehydration is a major concern, especially in the elderly, pregnant women, and people with other illnesses), people with healthy immune systems can still be susceptible to food poisoning symptoms—they just might be mild enough to not be worth reporting.

Stomach pain, nausea, vomiting, and diarrhea are the most common symptoms of food poisoning symptoms. The difference between mild and severe is the quantity—if you are losing more water than you are able to drink and hold down, you may need to visit the hospital where an IV bag can ensure you don’t become dehydrated.

The most common causes of food poisoning symptoms are raw/undercooked meats (especially if there’s a lot of surface area, as is the case with tuna scrape and meat glued meat), and poor kitchen hygiene. While some pathogens, including parasites, can originate in the animal, most contamination occurs from unwashed hands or kitchen surfaces/utensils—the so-called fecal-oral route. Food poisoning symptoms can be prevented by refrigerating or heating up foods to recommended temperatures, and scrubbing surfaces that have come into contact with uncooked meat (as well as hands).
